Please allow me to begin my introduction in English for once as today’s HEALTHY FRIDAY recipe comes from Laura, who lives in the Niagara region of southern Ontario, Canada. Wir freuen uns wirklich sehr, dass wir euch heute ein Rezept von Laura Wright zeigen dürfen. Laura führt den bekannten Blog The First Mess, und letztes Jahr hat sie ihr erstes, wunderbares Kochbuch herausgegeben. The First Mess ist einer meiner absoluten Lieblings-Foodblogs. Einerseits, weil Laura mit Zutaten kocht, die ich beinahe alle essen kann (das grenzt an ein kleines Wunder), andererseits, weil mir die Fotos von Laura extrem gut gefallen. Sie ist mit eine meiner liebsten Inspirationensquellen.

Was bei Lauras Rezepten jedoch am wichtigsten ist: Sie funktionieren – und sie schmecken! Das ist jedoch kein Wunder, denn Laura hat eine Culinary School besucht und in diversen Restaurants gearbeitet. Ausserdem stammt Laura aus einer Familie, in der frisches, saisonales Gemüse schon immer eine wichtige Rolle gespielt hat. Ihren ersten Job als Teenager hatte sie bei ihrem Vater, der einen Gemüsemarkt mit Produkten von lokalen Bauern geführt hat. In Lauras Rezepten findet man deshalb auch für jede Jahreszeit etwas Passendes, sodass man auch im Winter abwechslungsreiche, schmackhafte Gerichte zubereiten kann.

Wir zeigen das Rezept für Lauras Herzhafte Gemüse-Hanf-Hirse Nuggets zuerst in der englischen Originalversion, darunter findet ihr die deutsche Übersetzung.

SUPER SAVOURY VEGGIE, HEMP & MILLET NUGGETS

Serves: 3-4 (about 10 nuggets)

Notes: You could replace the broccoli and carrots with any finely grated vegetable you’re into. If you want to keep this recipe oil-free, sauté the vegetables in a little bit of water and definitely bake the nuggets on parchment (rather than on a naked baking sheet). I haven’t tried these nuggets with quinoa or rice or any other grain, so experiment at your own risk. Last thing: the psyllium husk is the glue here and yes, you need it. It can be found inexpensively at bulk stores, health food shops, online, and even at HomeSense/Home Goods stores!

NUGGETS:
⅓ cup dry millet (or if you have cooked on hand, you’ll need 1 cup of cooked millet)
sea salt and ground black pepper, to taste
1 tablespoon avocado oil (or other oil), plus extra
½ cup grated broccoli (about 4-5 regular florets grated with a box grater)
½ cup grated carrot (1 medium carrot)
2 small shallots, peeled
1 teaspoon minced fresh rosemary
½ teaspoon ground turmeric
½ teaspoon lemon zest
pinch of cayenne pepper
2 tablespoons hulled hemp seeds
1 ½ teaspoons psyllium husk powder
1 tablespoon nutritional yeast
1 teaspoon grainy mustard

CREAMY MAPLE MUSTARD DIPPING SAUCE:
2 tablespoons raw cashew butter
2 tablespoons water, plus extra to thin
1 tablespoon pure maple syrup
1 tablespoon grainy mustard
1 teaspoon lemon juice
1 small clove of garlic, finely grated with a microplane
sea salt

Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Lightly brush the parchment with oil and set aside.

In a small saucepan over medium-high heat, combine the millet with ¾ cup water and a pinch of salt. Cover and bring to a boil. Simmer the millet until all water is absorbed and grains appear fluffy/lightly mushy, about 20-25 minutes. Set aside to cool.

Heat the avocado oil in a medium sauté pan over medium heat. Add the broccoli and carrots to the pan. Using the box grater, grate the shallots and transfer them to the pan as well. Season the vegetables with salt and pepper, and stir. Cook until carrots are soft and broccoli is bright green. Stir in the rosemary, turmeric, lemon zest, and cayenne pepper before taking off the heat to cool slightly.

Pack a 1 cup measurement with the cooled millet. You might have a couple mouthfuls extra. Transfer the cup of millet to a food processor. Add the cooked vegetable mixture to the food processor as well. Lastly: add the hemp seeds, psyllium husk powder, nutritional yeast, and grainy mustard to the food processor. Season the mixture with salt and pepper.

Run the food processor on high until the grains and vegetables start clumping together.

Form the nuggets: lightly oil your hands and measure out a scant 2 tablespoons of the millet mixture per nugget. Shape into little patties or freeform bites and set on the parchment lined baking sheet.

Once all the nuggets are formed, lightly brush the tops with a bit more oil. Slide the baking sheet into thge oven and bake for 22 minutes, flipping the nuggets halfway. They should be lightly browned and feel solid enough to pick up.

To make the dipping sauce, in a small bowl, whisk together the cashew butter, water, maple syrup, mustard, lemon juice, garlic, and salt. Add more water to thin if necessary.

Serve nuggets warm with the dipping sauce!

SUPER HERZHAFTE GEMÜSE, HANF & HIRSE NUGGETS

Zutaten für  3 – 4 Personen (ca. 10 Nuggets)

Info: Der Broccoli und die Karotten können durch irgendwelche anderen fein geraffeltem Gemüse ersetzt werden. Wer kein Öl benutzen möchte, kann das Gemüse in wenig Wasser sautieren. Ich habe diese Nuggets nicht mit anderem Getreide wie Quinoa oder Reis probiert, du müsstest selbst mit anderen Zutaten experimentieren. Wichtig: Die Flohsamenschalen sind der „Kleber“ hier und ja, es braucht ihn unbedingt. Flohsamenschalen sind günstig und in Bioläden, Reformhäusern erhältlich. (Anmerkung Petra: Flohsamenschalen findet man in der Schweiz inzwischen sogar im Grossverteiler).

NUGGETS:
1/3 cup Hirse (oder 1 cup gekochte Hirse)
Meersalz + frisch gemahlener, schwarzer Pfeffer nach Wunsch
1 EL Avocadoöl (oder anderes Öl), plus ein wenig mehr
1/2 cup geraffelter Broccoli (ca. 4 – 5 Röschen)
1/2 cup geraffelte Karotten (1 mittelgrosse Karotte)
2 kleine Schalotten, geschält
1 TL kleingeschnittener Rosmarin
1/2 TL Kurkumapulver
1/2 TL Zitronenschale
1 Prise Cayennepfeffer
1 EL geschälte Hanfsamen
1 1/2 TL Flohsamenschalen
1 EL Nährhefe (Edelhefe)
1 TL grobkörniger Senf

CREMIGE AHORN SENF DIPPING SAUCE:
2 EL rohes Cashewmus
2 EL Wasser
1 EL Ahornsirup
1 EL grobkörniger Senf
1 TL Zitronensaft
1 kleine Knoblauchzehe, fein geraffelt
Meersalz

Den Backofen auf 200 Grad vorheizen.
Backblech mit Backpapier auslegen, mit wenig Öl bestreichen und beiseite stellen.

In einer kleinen Pfanne auf mittlerer Hitze die Hirse mit 3/4 cup Wasser und einer Prise Salz aufkochen und 20 – 25 Min. leicht simmern lassen, bis alles Wasser aufgesogen ist. Ab und zu umrühren. Beiseite stellen und abkühlen lassen.

Avocaodoöl in einer Bratpfanne erhitzen. Broccoli und Karottenraspel beigeben. Schalotten mit einer Reibe reiben und zum Gemüse geben. Gemüse mit Salz und Pfeffer würzen, gut mischen. Das Gemüse kochen, bis die Karottenraspel weich und der Broccoli leuchtend grün sind. Rosmarin, Kurkuma, Zitronenschale und Cayennepfeffer hinzufügen, mischen,, vom Herd nehmen und leicht abkühlen lassen.

1 cup gekochte Hirse und das Gemüse in einen Food Processor geben. Hanfsamen, Flohsamenschalen, Nährhefe und Senf dazugeben und nach Wunsch mit Salz und Pfeffer würzen. Food Processor starten und so lange laufen lassen, bis die Mischung zusammenzuklumpen beginnt.

Hände leicht einölen und aus der Mischung Nuggets formen, ca. 2 EL pro Nugget. Die Nuggets auf das Backblech legen. Die Nuggets mit wenig Öl einpinseln und 22 Minuten backen, dabei nach der halben Backzeit die Nuggets wenden. Sie sollten leicht braun und solid genug werden, sodass man sie in die Hand nehmen kann.

Für die Dipping Sauce alle Zutaten in einer kleinen Schüssel zusammenmischen, auf Wunsch etwas Wasser hinzugeben, wenn man die Sauce flüssiger haben möchte.
